Deep Fried Tilapia Recipe

Whole tilapia scored, rubbed with garlic, onion and paprika, then deep fried until crisp and golden. A simple, Kenyan style everyday fish fry.

Ingredients
  

  • 2 whole tilapia cleaned and scaled
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tablespoon lemon juice
  • 1 tablespoon paprika
  • 2 tbsp chicken broth powder or salt to taste
  • Oil for deep frying

Instructions
 

  • Prepare the fish by scaling and removing fins if needed.
  • Pat the tilapia completely dry with paper towels. Apply 3–4 diagonal cuts on each side of the fish to help the seasoning penetrate and the fish cook evenly.
  • Mix the garlic powder, onion powder, lemon juice, paprika, chicken broth powder and salt. Rub the mixture all over the fish, including inside the cavity and into the cuts. Marinate for about 30 minutes or refrigerate overnight for deeper flavor.
  • Heat enough oil to submerge the fish in a deep, heavy pot to approximately 350°F (175°C). Carefully lower in one fish at a time.
  • Fry for about 6–10 minutes per side, depending on the size, until golden brown and cooked through. The thickest part should reach 145°F (63°C).
  • Transfer to a wire rack or paper towels to drain. Serve it hot with some lemon wedges and your favorite sides.
