Ingredients
  

  • 4-5 medium sausages sliced
  • 2 medium potatoes diced small
  • 1 small onion chopped
  • 1 red bell pepper chopped
  • 1/2 green bell pepper chopped
  • 4 eggs
  • 2 tbsp oil
  • salt and black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp chilli flakes optional
  • 1/4 cup shredded cheese optional

Instructions
 

  • Heat oil in a large pan over medium heat.
  • Add potatoes, salt, pepper, and a splash of water. Cover and cook 8–10 minutes until tender.
  • Stir in sausage and cook 3–4 minutes until browned.
  • Add onions and peppers; cook 2–3 minutes until soft.
  • Stir in spices (paprika, garlic powder, chili flakes).
  • Add eggs into the hash. You can also create wells and crack eggs into the wells.
  • Cover and cook until eggs are set to your liking.
