Rinse the tilapia fillets under cold running water and pat them dry with paper towels.
In a small bowl, whisk together all the ingredients except the fillet
Pour the ingredients into the fish and marinate for 15-20 minutes
Place the tilapia fillets in a baking dish/tray and pour half the marinade over them, coating each fillet evenly.
Cover the baking dish with foil and bake for 10 minutes, remove foil then pour the rest of the marinade and bake for an additional 10 minutes or until the edges are slightly golden
Serve the baked tilapia fillets hot, garnished with fresh parsley if desired.
