Tasty Jerk Chicken Recipe

Jerk chicken is a popular dish that originates from the Caribbean. It is known for its unique blend of spices and flavours that create a perfect balance of sweet and spicy. This dish is perfect for any occasion, whether it’s a family dinner or a backyard barbecue party, it will be guaranteed to please any crowd. To make this jerk chicken, you will need.
-8 drumsticks
– 2 tbsp of olive oil
-1/2 tbsp thyme
-1 tbsp sweetener or brown sugar
-2 tbsp soy sauce
-1/2 tbsp vinegar
-2 tsp allspice
-1 tsp salt or to taste
-1 tsp black pepper
-1 tsp black pepper
– 1 tsp garlic powder
-1 tsp onion powder
-1 tsp minced garlic
-1 tsp chilli powder
-1/2 tsp ground ginger
-1/4 tsp cayenne pepper
-1/2 tsp nutmeg
-1 tbsp hot sauce
For the sauce
– Leftover marinade
– 1 cup water
-1/2 cup mayo
-1 tbsp hot sauce
-1 tsp sweetener or brown sugar
Instructions:
1. Prepare by making slices on the chicken then rinsing under cold running water. Once done, pat them dry with a paper towel.
2. In a large bowl, combine the chicken ingredients and mix well until evenly distributed.
3. Add the chicken pieces to the bowl and coat them with the marinade.
4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for maximum flavour.
4. Preheat your grill to medium-high heat. Remove the chicken pieces from the marinade and save the marinade.
5. Grill the chicken pieces on each side for 6-8 minutes until the meat is cooked through and the skin is crispy and charred. Alternatively, bake the chicken in the oven at 375 degrees for 30 minutes or until done and crispy.
6. Meanwhile, in a small saucepan, add the sauce ingredients minus the mayo, and let it simmer for 5 minutes then add the mayo. Mix evenly to remove any lumps then remove from heat.
6. Remove the chicken from the grill or oven and let it rest for 5 minutes before serving.
7. Serve the jerk chicken by placing it on a plate then spoon sauce over the chicken. Pair with your favourite side dishes such as rice and beans, roasted vegetables, Sautéed Cabbage or grilled pineapple.
8. To make the sauce, combine all the ingredients in a small pot and cook down until it thickens ensuring you vigorously stir to loosen up the mayo. Scoop sauce over the jerk chicken
