For Kebab

  • 1 lb beef or 3 cups
  • 1 cup cremini mushrooms halved
  • 1/2 large red bell pepper diced into chunks
  • 1/2 large yellow pepper diced into chunks
  • 1/2 large green pepper diced into chunks
  • 1/2 large onion diced into chunks
  • 1/2 tsp seasoning salt or more to taste
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 8 wooden skewers soaked in water

For Marinade

  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 2 tbsp monk fruit/erythritol
  • 1 tbsp Redwine vinegar
  • 1 tsp ginger garlic paste
  • 1 tbsp lemon juice
  • 1 tsp crushed pepper or less for less spicy
  • 1/2 tbsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • 1/2 tsp baking soda

  • Whisk together the marinade ingredient in a medium bowl until well-mixed.
  • Add meat to the bowl and mix well. Cover and transfer to a fridge and allow to marinate overnight or at least for 2 hours.
  • Preheat grill to 425 degrees.
  • Place the vegetables in a bowl and add, seasoning salt and pepper. mix well.
  • To assemble, skewer beef cubes and vegetables. I usually start and finish with beef but you can arrange it whichever way you feel like
  • Grill kebabs for 7 minutes then flip and cook for another 3-5 minutes until done depending on your preference.
  • Remove and let sit for 5 min before serving

  • There is so much you can add to the skewers. One of my favourite additions is potatoes. You'd have to parboil it first though then skewer it. You can also add cherry tomatoes and zucchini for extra vegetables.
  • Do not overcook the meat otherwise, it will become dry and lose flavour. If using the oven, cook for 20 minutes then flip and cook another 10 min. Oven temperatures vary, so it's advisable to use a thermometer for the best results. The internal temperature should be 145-150 degrees
  • You can serve this with roast potatoes, a side of caesar salad or mashed potatoes.
  • The baking soda will ensure you get tender beef no matter the cut. If you are able to get good quality beef, you can skip the baking soda.
