Easy Beef & Bok Choy Stir Fry

If you have bok choy sitting in your fridge or have been wanting to add/try different vegetables and are not sure what to do with bok choy, then this is your recipe. Very simple to make with ingredients you may already have in your fridge and pantry.

The dish can be kept in the fridge for up to 3 days in a tightly locked container.

A one-skillet flavourful easy-to-make dinner that will be ready in minutes which makes it great for a weeknight meal. This beef and bok choy stir fry will give the takeout one a run for its money. Pair this with steamed white or brown rice, or noodles or simply add extra vegetables for a full meal.

Ingredients
  

  • 1 pound flank steak thinly sliced
  • 3 cups baby bok choy
  • 1 tsp ginger minced
  • 1 tsp garlic minced
  • 2 medium green onions sliced, whites and greens separated
  • 1/4 tsp baking soda
  • 2 tbsp olive oil
  • 1 tbsp soy sauce

For Sauce

  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp corn starch
  • 2 tbsp hoisin sauce
  • 1/4 tsp red pepper flakes
  • tsp sugar

Instructions
 

  • In a medium sized bowl, combine the beef, baking soda, and 1 tbsp soy sauce and set aside for 20 minutes
    1 pound flank steak, 1/4 tsp baking soda, 1 tbsp soy sauce
  • While waiting, combine all the sauce ingredients in a bowl and set aside
    1 tbsp sesame oil, 1 tbsp corn starch, 2 tbsp hoisin sauce, 1/4 tsp red pepper flakes, tsp sugar, 1 tbsp soy sauce
  • Heat olive oil in a skillet and the steak pieces.
    2 tbsp olive oil
  • Add garlic, ginger and whites of the onion and cook for 2-3 minutes. Remove and set aside
    1 tsp ginger, 2 medium green onions, 1 tsp garlic
  • In the same. skillet, add the box choy and stir for 1-2 minutes
    3 cups baby bok choy
  • Return the cooked beef to the skillet and stir in the sauce. Mix well and cook until hot and bubbly.
  • Remove from heat. Serve over white rice and garnish with the green onions.
