Ingredients
  

  • 540 ml Chickpea Canned
  • 1 medium onion chopped
  • 1 tbsp olive oil
  • 1 cup crushed tomatoes
  • 1 tsp garam masala
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1 tsp salt or more to taste
  • 1 tsp minced garlic
  • 1/2 tsp minced ginger
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1 tsp erythritol/monk fruit or sugar
  • 1/2 cup coconut milk
  • 1 tsp lemon juice

Instructions
 

  • In a pot over medium heat, add the olive oil and onions
  • Sautee until it caramelizes then add garlic and ginger
  • Once it browns (Don't let the garlic and ginger burn) add the tomato sauce and cook for 2 minutes then add the spices
  • Stir for 1 minute then add the chickpeas and mix everything well to combine
  • Add coconut milk and water and stir well to combine then cover to simmer
  • Let it simmer for about 10 minutes or until the sauce reduces to half
  • Taste the curry and add salt/pepper according to taste. Remove from heat then add the lemon and stir well to combine. Allow it to cool slightly then serve. Enjoy!
