Steak Caesar salad

Juicy, delicious, steak salad made with fresh veggies makes a great healthy lunch or dinner meal.

Ingredients
  

For Caesar Salad Dressing

  • 1 tsp minced garlic
  • 1/2 cup mayonnaise
  • 1/2 tsp Dijon mustard
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tbsp powdered erythritol/monk fruit or more to taste

For Steak

  • 1.5 lbs boneless prime rib steaks
  • 2 tsp salt 1/2 tsp per steak
  • 3 tbsp olive oil

For Salad

  • 1 head romaine lettuce torn/chopped into bite sized pieces
  • 1 cup cherry tomatoes cut into half
  • 1 large avocado ripe
  • 1 medium English cucumber diced
  • 1/2 red bell pepper sliced
  • 1 tsp black pepper
  • 1/2 medium onion thinly sliced
  • 1 tbsp lemon juice fresh, to serve

Instructions
 

  • Evenly coat both sides of the steak with salt and pepper. Set aside to marinate for 20 minutes
  • While marinating, mix the dressing ingredients in a medium size bowl and combine well.
  • In a large bowl, add the salad ingredients minus the avocado. Toss the dressing into the mix. Reserve some to top off.
  • Heat a nonstick pan over high heat and drizzle olive oil. Once hot, add the steak and cook for about 2 minutes undisturbed. Flip the steak and let it cook for another 3-5 min.
  • Transfer to a chopping board and let it rest for at least 5 min
  • Thinly slice the steak across the grain and serve
  • Slice the avocado onto the same plate and drizzle the lemon juice.

Notes

  • Use any good cuts for this recipe. You don't want chewy meat for your salad. Flank steak works great
  • You can make the dressing in advance and keep it in the refrigerator until ready for use. 
  • For the keto family, reduce to half the amount needed for bell peppers, tomatoes, and onions to bring down the number of carbs.
